We love a good pandemic pivot story, and today won't disappoint. This married couple was tired of their banking and insurance jobs, so they decided to start a business "popping up" all over with their Vegan Taco concept. When they learned of the Nashville Farmers Market Incubator program they jumped on the opportunity and continue to serve their tacos at the Farmers Market in Nashville.  Side editorial note, this was Carolines first interview actually recorded, but the third released.
